Luteal Phase Chicken Tortilla Soup

Ingredients:
1 tbsp avocado oil
1 yellow onion, diced
1 red bell pepper, diced
2 carrots, diced and peeled
3 garlic cloves, minced
2 chicken breasts, cooked and shredded (I air-fried my chicken)
1.5 tsp chili powder
1.5 tsp paprika
1 tsp dried oregano
4 cups chicken bone broth
1 can diced tomatoes
salt
pepper
1/2 lime
1/4 cup fresh cilantro
gluten free tortilla chips (I use Siete)
Directions:
Heat avocado oil over medium heat in pot or deep dish skillet. Sauté onion, red bell pepper, carrots, and minced garlic for about 5-7 minutes until soft.
Stir in paprika, chili powder, and dried oregano.
Slowly mix in chicken bone broth and can of diced tomatoes. Bring to a boil then simmer for 10 minutes on medium low heat. Add in the shredded chicken and simmer for another 10 minutes.
Add juice from 1/2 lime, salt, and pepper to flavor. Serve soup, top with fresh cilantro and tortilla chips.
