Luteal Phase Chicken Tortilla Soup

This recipe is perfect for your luteal phase! It is a highly nutrient dense dish that helps promote estrogen balance, calms hormonal fluctuations, and supports the health of your moon cycle. Enjoy! 😋

Ingredients:

  • 1 tbsp avocado oil

  • 1 yellow onion, diced

  • 1 red bell pepper, diced

  • 2 carrots, diced and peeled

  • 3 garlic cloves, minced

  • 2 chicken breasts, cooked and shredded (I air-fried my chicken)

  • 1.5 tsp chili powder

  • 1.5 tsp paprika

  • 1 tsp dried oregano

  • 4 cups chicken bone broth

  • 1 can diced tomatoes

  • salt

  • pepper

  • 1/2 lime

  • 1/4 cup fresh cilantro

  • gluten free tortilla chips (I use Siete)

Directions:

  1. Heat avocado oil over medium heat in pot or deep dish skillet. Sauté onion, red bell pepper, carrots, and minced garlic for about 5-7 minutes until soft.

  2. Stir in paprika, chili powder, and dried oregano.

  3. Slowly mix in chicken bone broth and can of diced tomatoes. Bring to a boil then simmer for 10 minutes on medium low heat. Add in the shredded chicken and simmer for another 10 minutes.

  4. Add juice from 1/2 lime, salt, and pepper to flavor. Serve soup, top with fresh cilantro and tortilla chips.

  5. Enjoy!
